plaque 1: THE MALTMAKER / BY JILL TWEED FRBA FRSA / UNVEILED ON 4 NOVEMBER 1999 BY HUGO PAGE CROFT ESQ. / TO COMMEMORATE THE MILLENNIUM AND ALL THE MEN WHO WORKED IN THE WARE MALTING INDUSTRY FROM 1339 - 1994; plaque 2: MALT IS THE MAIN INGREDIENT OF BEER AND WHISKY AND IS PRESENT IN MAY FOODS. IT IS MADE BY THE CONTROLLED GERMINATION OF BARLEY MADE BY FRYINF THE STARCH INTO A FERMENTABLE SUGAR KNOWN AS 'MALTOSE' MALTING WAS RGE DOMINANT LOCAL INDUSTRY AND THE 18TH CENTURY WARE BECAME THE PRINCIPLE SUPPLIERS TO THE LONDON BREWERS, UNTIL THE 1960'S MALT WAS MADE IN WARE IN TRADITIONAL FLOOR MALTINGS AS ILLUSTRATED ON THE OTHER SIDE OF THE PLINTH. A MECHANICAL MALTING WAS BUILT BY HARRINGTON PAGE AND CO LATER PART OF PAULS MALT. ITS CLOSURE IN 19994 BROUGH T TO AN END A TRADITION OF AT LEAST 600 YEARS
